Worldly Wednesday – Gingerbread Cupcakes with Maple Frosting

Ho! Ho! Ho!

We are on the countdown to Christmas since I’m such a nerd and have all my shopping done already it means I have more time to Bake.  Huzzah!

The sweet aromas of this cake made with ginger and spice, topped off with gloriously creamy frosting will surely tempt everyone’s tastebuds.

Don’t blame me if there are none left for you!!

Gingerbread Cupcakes with Maple Frosting

Makes 12

YOU WILL NEED

  • 175g Butter
  • 175g Dark Brown Sugar
  • 3 Eggs
  • 1 tablespoon ground Ginger
  • 1 tablespoon ground Mixed Spice
  • 1/2 cup Golden Syrup
  • 1 3/4 cups SR Flour
  • 1/3 cup Milk

For The Frosting:

  • 175g softened Butter
  • 500g Pure Icing Sugar
  • 1/3 cup Maple Syrup

THE HOW TO

Preheat your oven to 160Deg C;

Cream your butter & sugar in a mixer;

Add the eggs, one at a time;

Add your ground spices and Golden Syrup and mix well, scraping the sides of the bowl if necessary;

Add your flour and milk and mix well till all combined;

Divide between baking papers and cook for approx. 12-15mins until done;

Allow to cool.

Frosting:

Combine butter, Icing Sugar and Maple Syrup in an electric mixer;

Beat well until all combined.  (If the mixture is to runny, add more Icing Sugar until it reaches a piping consistency);

Place into a piping bag with a star nozzle and pipe onto each cupcake;

Add a cute mini Gingerbread Man for decoration and Enjoy!
