Worldly Wednesday – faster, faster one pot pasta!!

Want a quick, easy, and all in one pot yummy pasta dish?

Inspired by Martha (as I often am), I cooked up this easy, peasy one pot pasta!

You’ll Need
1 large pot
200gm spaghetti
1 small handful of basil
2 handfuls of baby spinach
2 cloves of garlic, sliced thinly
1 brown onion, sliced thinly
1/2 punnet of cherry tomatoes, halved
2 whole peppercorns
4 cups of water
Salt and Pepper to taste
A handful of parsley, finely chopped, stalks separated from leaves
A small handful of grated cheddar or shaved parmesan for each serve.
Olive oil for drizzling

The How To:

  • Add all your ingredients (except for your parsley leaves, olive oil and cheese) to a large pasta pot.

  • Cook for around 9-10 minutes or until pasta is aldenté (I have a gas cooktop, if you have an older style coil or hard plate cooktop it may take a little longer (keep an eye on your water levels).
  • Serve your pasta in a bowl, drizzled with a little olive oil and topped with parsley and cheese. Winner, winner one pot dinner/lunch!
