Worldly Wednesday – Chicken & Rocket Salad

Ever since going back to the Gym I have been eating like a woman possessed.  I’ve such an affinity for good salads lately and wanted to share one of my favourites.

The more perceptive among you have probably realised by now I’m using the EZLock containers I bought from Yvette over at Little Bento Shop.  I am IN LOVE with these (as is Miss N).  They are the perfect size to fit a good lunch and it just goes to prove that Bento isn’t just for kids!

Chicken & Rocket Salad

Serves 1

YOU WILL NEED:

1 x large handful Rocket Leaves

3 x Chicken Tenderloins

1 x Avocado

1 x small handful Baby Broccoli heads

1 x Tomato

2 x Eggs, Boiled

1 x small handful Corriander leaves, roughly chopped

2 z teaspoons Peanuts or Cashews, roughly chopped

2 x Tablespoons Mayonnaise

THE HOW TO:

Cook your Chicken in a pan with good olive oil, allow to cool then slice;

Peel your Eggs and cut in half;

Arrange your salad starting with the Rocket, Eggs, Chicken, Broccoli & Tomato

Keep your Avocado whole until ready to serve, and then cut into cubes and place on top;

Mix your Mayonnaise with the Corriander and Cashews and dollop on the top

Enjoy!!
