Road Test Tuesday – From Bondi Chai to Cheesecake Crumbles

Vanilla Chai Cheesecake Crumbles

Let me start by saying I’m not a fan of Chai.

We had some samples of Bondi Chai sent to us and himself  and KK have been loving it!   Its a really simple, just add hot milk type of deal which gives you a creamy hot cup-o-chai.

I did try it out however wasn’t all that fussed (as I said, i’m not a fan so I honestly wasn’t all that surprised).  It got me thinking as to what I was going to do with the sachets of Chai.  I thought cream would go well and so decided upon a deconstructed cheesecake (of sorts).  Say hello to my Vanilla Chai Cheesecake Crumbles!


Makes 8


2 x Sachets Bondi Chai – Vanilla & Honey

2 x Blocks Philly Cream Cheese (Room temp! Otherwise you will have lumps you will never whip out)

2 x Tablespoons Icing Sugar (Sifted)

6 plain Biscuits, such as Arrowroot or Marie – crushed

Dark Chocolate for Garnish


Crush your biscuits using a food processor or similar.  Set Aside;

Put your cream cheese  in a mixer and beat well until smooth;

Add your sachets of Bondi Chai and the icing sugar and mix in well;

Divide out between 8 ramekins and refrigerate for as long as possible – 6/8 hrs is good – overnight is better!

Just before serving, Top each cheesecake with a pile of crumbles and a few curls of dark chocolate.

The Chai flavour in these desserts is definitely there, but not as overpowering as a whole cup of Chai, therefore giving you the experience of something different in a very subtle and creamy way.  I served this as dessert after a Massaman Curry and it really matched in well.
