Steamed Mussels in Garlic and Wine

Just the thought of curling up in a warm little corner shop on a cold european day with a table full of simple yet fabulous food just makes me misty for Paris.  I will get there….one day.  In the meantime I will just have to keep making treats like this!  1kg of shellfish cost us just under $10 and it fed 3 hungry adults and two little girls.  No excuses not to try it people!  This is simple, yet affordable.  Just the way good Bistro fare should be.

STEAMED MUSSELS WITH GARLIC AND WINE

YOU WILL NEED:

1kg extra large mussels

a glass of dry white wine

1 x clove garlic – crushed

1 x teaspoon butter

1 x small Splash Olive oil

1 x large handful fresh Parsley, chopped roughly

THE HOW TO:

Clean your mussels, discard any dead ones and be-beard them;

Heat a large stock pot on a high heat;

Add your oil, butter and garlic and fry for a few moments;

Pour in your mussels, shake the pan, add your glass of wine and pop the lid straight on;

Leave to steam for approx. 3 – 5 minutes

Throw in your chopped parsley right at the last moment!;

Serve with a ladle full of the juices and some super buttery, crusty bread.

NOTE:  Its also goes FABULOUSLY well with these French Prawn Rolls!!
