Crunch Fish Burrito’s

We LOVE Burrito’s in this house. Easy, Cheap, Always a winner.  This version is a great alternative to meat or beans and really tastes fabulous!

CRUNCHY FISH BURRITO’S

YOU WILL NEED:

For the Fish:

Firm, white fish fillets (approx 2 per person).  I used Monkfish but any good white fish will do.

2 cups Breadcrumbs

4 Tablespoons Burrito seasoning.  (You can make your own or use a packet version)

2 cups flour

2 eggs – whisked

Vegetable Oil for frying

For the Burrito Fillings:

Sour Cream

Chilli Sauce (optional)

Avocado (diced, or Guacamole)

Tomato (diced)

Grated Tasty Cheese

Shredded Lettuce

THE HOW TO:

Prepare all your fillings and have them all ready to go on the table with your Tortillas;

Pre-heat the vegetable oil in a large frypan on a med-high heat;

Grab 2 bowls and place out your flour & whisked eggs ready for crumbing your fish;

Take your Burrito seasoning and mix it in with your breadcrumbs on a flat plate;

Prepare your fish by slicing into large, similar sized chunks.  Coat each piece in the flour, the egg and then the breadcrumb mixture. (If you have any crumbing mixture left over you can always double-crumb your fish – it just makes it extra crunchy!!);

Place your fish in the hot oil and fry for a few minutes each side until golden and cooked through;

Wrap your Burrito’s just like you normally would.  A good slather of Guacamole & Sour Cream, Lettuce, Tomato & Cheese and a few pieces of the hot, crunchy fish.

Delish!!!
