I recently had a great vegetarian pasta salad and its given me a whole new stack of ideas for great salad recipies.  I LOVE a good salad and so I have had a go at creating something that is not only incredibly healthy and super tasty but also really simple.  Its also a great way to increase the amount and variety of vegies in your meals without a massive extra expense.  Additionally, if you are like us and want to add a little extra protein – its easily done with a little lean BBQ beef.

Wholemeal Pasta Salad with BBQ Beef

Serves 4


2 lean steaks of beef (about 1cm thick.  Rib Eye or Sirloin is good)

5 handfuls wholemeal pasta spirals

1 x small bunch fresh green asparagus (approx. 6-8 stems)

1 x small bunch broccolini (approx. 6-8 stems)

1 large handful fresh basil leaves

1 x packet goats cheese (approx. 200g)

2 x small cloves garlic

Juice of 1 x lemon

A good splash of olive oil

Pinch of salt


Bring a large pot of salted water to the boil and add your pasta;

Meanwhile slice the tops off your Asparagus and Broccolini (keeping them pretty and intact) and slice the stems thinly at an angle;

Heat your BBQ and cook your steaks as you like them (I think nicely pink and juicy in the centre is perfect – that’s about 2 mins per side or so). When done, put them aside to rest;

When the pasta is almost done, add your vegetables.  They only need to cook for approx. 30 seconds.  Do not overcook them or they will go mushy and loose all the vitamins and goodness.  Pour the whole lot out into a colander, rinse with cold water to stop the cooking and drain;

Make your dressing by crushing up your garlic with a pinch of salt in a mortar & pestle (or a mini food processor is good too).  Add the lemon juice and abount the same amount of oil.  Mix well to combine;

Transfer your pasta and vegetables to a serving bowl and mix in your basil;

Crumble the goats cheese over the top and then pour over the zesty dressing;

Slice your steaks at an angle and either serve them on top of your salad or on the side.
