Best Banana Muffins

Ok so this week, I’ve had some stuff to deal with, so apologies for the lack of usual Worldly Wednesday fare. But I figure bananas are cheap again and there is the occasional one languishing in the fruit bowl (or been piffed in the freezer before it went iffy, just waiting for a baking project), so let’s share a banana recipe.

Seriously what is better than banana muffins? And one of my lovely Mother’s Group friends sent me the link to this easy peasy recipe. I tried it and had to share…


2½ cups self-raising flour
¾ cup brown sugar
1 cup milk
1 egg
2 tablespoons margarine
1 teaspoon vanilla
2 ripe bananas


Combine milk, egg, margarine, vanilla and bananas, and blend in a mixing jug.
Place flour and sugar in a large bowl. Mix in milk mixture.
Pour mixture into a greased muffin tray.
Bake for 20-25 minutes at 180°C.
