Banana & Chia Thermomix Muffins

With school coming up, this recipe is a perfect healthy recess treat to pop in the lunchbox!

Banana and Chia Seed Muffins* Makes 12

You’ll Need
2 ripe bananas
1 tbsn chia seeds
40gm butter (chopped into pieces)
80gm brown sugar
2 eggs
170g yoghurt (natural or vanilla)
50g milk of your choice
1/2 tspn vanilla extract
160gm plain flour
100gm rolled oats
1 tsp baking powder
1 tsp baking soda (bicarb)

The how to

  • Preheat oven to 180°C.
  • Prepare a muffin tin by using muffin cases or spraying with oil.
  • Mash bananas in a small bowl & mix in chia seeds. Set aside.
  • Place oats in TM bowl and mill for 8 seconds/speed 7. Set aside. (Feel free to skip this step and instead add whole with the dry ingredients).
  • Place butter in TM bowl and soften for 30 seconds/50°C/speed 4.
  • Insert butterfly and add sugar. Cream for 1 min/speed 4. Scrape down sides of bowl and mix for a further 30 seconds.
  • Add eggs one at a time whilst mixing for 30 seconds/speed 3.
  • Add in yoghurt, milk and vanilla and mix for another 20 seconds/speed 3.
  • Remove butterfly. Scrape down sides. Add the bananas and chia seeds. Mix for 10 seconds/speed 3.
  • Add in flour, milled oats, baking soda and baking powder. Mix for 30 seconds/speed 3 until combined.
  • Fill your muffin trays to 2/3 full. Bake for 20-25 minutes or until a skewer comes out clean.

    Make your own Summer ‘Snow’ Balls for play!

    A hot Summer’s Day and we made SNOW!! Well kind of…
    This is my new go-to messy play item. Definitely for outdoors only, the shaving cream and corn flour combine to make a soft, squishy, light sensory play material. Miss E squealed with delight when she started mixing it all up and I must say that even I loved this one!

    Soft Sensory ‘Snow’
    You’ll Need
    One can of shaving cream.
    2 x 300gm boxes of corn flour (we probably had 550gm all up as one box had been opened).
    One plastic tub/bucket/water play table.

    The How To

  • Empty the can of shaving cream and your corn flour into the tub.

  • Mix all about until combined (lots of fun!)

  • Play, squeeze, shape, mould, do whatever you like. They make awesome snow balls for a snowball fight though!
