How about a fast, filling and yummy Burrito? Breakfast Burritos to be exact! Slightly different than the originals, they still pack a punch and allow you to serve up a great breakfast – even when your house is in upheaval, packing boxes surround you and the kids’ can’t find their socks.
YOU WILL NEED
2 x Burrito Tortillas
Hot Tomato Salsa
2 x Roma Tomatoes
Grated tasty cheese – 2 x handfuls
1/2 Avocado, sliced
200g Meat of choice (I used leftover roast lamb, you can use whatever you have on hand)
1/2 teaspoon each of Turmeric, Oregano, Cinnamon, Cumin & Paprika
Freshly ground pepper
THE HOW TO
Lay out your tortillas on a plate and top with a few spoonfuls of the hot salsa and some grated cheese;
Heat a pan to medium and cook your eggs to scrambled. Place on the tortilla;
Add your sliced meat to the pan along with your spices and cook for a few minutes until done. Place on top of the eggs;
Finally, chop your tomatoes and add to the burrito along with your avocado slices;
Wrap and Serve!
