Worldly Wednesday – Breakfast Burritos!

Breakfast Burritos

How about a fast, filling and yummy Burrito? Breakfast Burritos to be exact!  Slightly different than the originals, they still pack a punch and allow you to serve up a great breakfast – even when your house is in upheaval, packing boxes surround you and the kids’ can’t find their socks.


Serves 2


2 Eggs

2 x Burrito Tortillas

Hot Tomato Salsa

2 x Roma Tomatoes

Grated tasty cheese – 2 x handfuls

1/2 Avocado, sliced

200g Meat of choice (I used leftover roast lamb, you can use whatever you have on hand)

1/2 teaspoon each of Turmeric, Oregano, Cinnamon, Cumin & Paprika

Freshly ground pepper


Lay out your tortillas on a plate and top with a few spoonfuls of the hot salsa and some grated cheese;

Heat a pan to medium and cook your eggs to scrambled.  Place on the tortilla;

Add your sliced meat to the pan along with your spices and cook for a few minutes until done.  Place on top of the eggs;

Finally, chop your tomatoes and add to the burrito along with your avocado slices;

Wrap and Serve!

I’m pretty sure yesterday marked the end of an (albeit short) era…
Master O finally managed to consistently climb out of his cot. He’s climbed out once before, long ago, by fluke. I guess I can be lucky it didn’t happen earlier!

Our plan had been to transition him to his big boy bed (which we had started) with the plan of putting him to bed at first in his bed and if he got out, we would put him in the cot. He wanted to sleep in his bed, so we figured after a little while he would get the idea that if he got out of bed he would end up in the cot. Good plan, but it seems we’ve run out of time.

Last night was filled with numerous trips putting him back to bed, only for him to come back out again as soon as we left. I ended up laying on his bed guarding him until he went to sleep, but I’m obviously not keen on doing THAT every night…
I’m thinking this week is going to be very trying…
